1/2 c. walnuts, chopped
1 1/2 c. pre-cooked brown rice
2 sticks celery, finely chopped
1 c. onions, minced
1 tsp. garlic powder
salt to taste
2 Roma tomatoes, finely chopped
2 Tbs. extra-virgin olive oil
2 cups whole wheat bread crumbs
2/3 cup soy milk (plain)
1 Tbsp. McKay's chicken seasoning
1 tsp. parsley flakes
1 tsp. Italian seasoning
1 tsp. dried basil
1/3 c. gluten flour
Chop the walnuts and finely chop the celery. In a bowl, combine these ingredients with thecooked rice, the garlic powder and the salt. Add the onions, parsley flakes and the rest of the seasonings. Add the rest of the ingredients, mixing well.
Place the mixture into an oiled baking dish and bake in a moderate oven (about 350º F for about half an hour.)
Serve plain or with a favorite sauce or gravy.
