Zucchini Pancakes
1 1/4 cups all-purpose flour
2 Tbs. raw sunflower seeds, ground
Ener-G egg replacer for 1 egg (1/4 cup replacer powder
dissolved in 1/2 cup water and beaten to the consistency
of soft egg whites)
2 tsp. Ener-G baking powder
1 tsp. salt
1/8 tsp. brown sugar
1 cup plain soy milk
1 cup grated zucchini (raw)

Grate your zucchini. Grind your sunflower seeds in a blender, set aside. Prepare your egg replacer and set it aside. In a bowl, combine the flour, sunflower seeds, salt, baking powder, mix well. Combine the egg replacer with the milk, mix well. Add the zucchini. Stir into the dry ingredients combining well into a batter. Grease a griddle and turn on the heat. Pour your batter by 1/4 cupfuls into the hot griddle and cook your pancakes, turning when bubbles form. Continue cooking until golden. Serve with topped with Better than Cream Cheese.
