Lickity-Split Lentil Cold Cuts

(These can look like they came out of a can. Just Iike meat cold cuts, and are terrific for sandwiches. Practice till you get them just right.)
Grind the following in a dry blender until very fine:

3/4 cup dry, uncooked lentils.
Then combine the following in a saucepan and bring it to a boil: 2 cups tomato sauce (you can make this also with tomato puree)
ground lentils
1 1/2 teaspoon onion powder
a few drops sesame oil (optional)
1/4 teaspoon salt (or less than that)
1/4 teaspoon Italian Seasoning
1/8 teaspoon garlic powder
any other seasoning you like to add
Reduce heat to LOW and cook the ingredients for 15 to 30 minutes, striffing constantly. Try to cook it for the 30 minutes, if your stove really cooks on low.
The longer the time, the better the lentils will be cooked. Don’t worry if it sticks a little. Soaking it for some time will help to scrub it off easily.
Remove the cooked lentils from the pot and pack them into a round can you
have previously washed and put aside.
Once in the can, chill the lentils very
well (or else they will not slice well).
Slice them just before serving.
You can serve them with whole wheat
or sesame buns with onions, lettuce,
tomatoes, pickles, etc.
Or you can sautee them (in thicker slices)
in onions with a few tablespoons of
olive oil, a few drops of sesame oil,
and plenty of peppers and serve them
as a side dish for rice or potatoes.
(If high cholesterol is a concern, stick with the olive oil only and skip the sesame oil.)
