Makes 4-6 servings
Cooking time: About 10 minutes (allow time for setting)
Wash, drain and hull the strawberries, slice in half. Divide the berries amongst individual glasses, chill.
Place the water in a shallow bowl and sprinkle the gelatine over. Stand for five minutes or until the gelatine swells. Heat gently over hot water until the gelatine dissolves. Place the evaporated milk in the top of a double saucepan. Heat to scalding point. Beta the egg yolks and sugar together. Return the mixture to the saucepan. Cook over hot water, stirring constantly, until the mixture thickens.
Remove from heat, stir in the gelatine. Cool. Stir in the brandy. Chill until the mixture thickens and has the consistency of unbeaten egg white. Beat the egg white until the peaks just fold over when the beater is removed. Beat in the castor sugar. Fold the gelatine mixture carefully, but thoroughly into the egg whites. Spoon the mixture over the strawberries. Chill until firm.
