Lamb Recipes

Kim's Easy Mutton
Skillet
One of our faithful customers at the Midtown Farmers Market
gave us this recipe for a quick ground mutton or lamb stew.
Ingredients:

2-3
carrots (sliced) |
|
1 lg or 2 med potatoes |
|
2
stalks celery (sliced) |
|
onion (option) |
|
1 lb
round lamb or mutton |
|
1 can cream of mushroom soup |
|
splash of Worcestershire sauce |
|
salt and pepper to taste |
|
veggie oil |
|
|
Coat
frying pan with oil. Sauté veggies slightly. Add thawed mutton or lamb.
Splash sauce over it.
Season to taste. Brown meat and cook veggies. Cover and cook over low
heat 25 to 30 minutes.
Press down flat in pan with spatula. Do not dilute soup and pour it over
mixture, spread evenly.
Cover again and heat until top is boiling slightly. Take off the stove
and allow to sit for 5 minutes.
Slice into pie slices or squares and serve.
(Note: Leftover, cooked vegetables can be used to shorten cooking time.)
