Sheepy Hollow Lamb
Meat Loaf
(with a hint of Barbeque/Mint flavor)

and given an 'A' rating by all four
2 lbs of Sheepy Hollow ground lamb
1 cup of Ritz crackers (crushed)
1 can (15 oz) of diced tomatoes drained
¼ cup of your favorite barbeque sauce
1 large slightly beaten egg
2 Tablespoons of honey
2 Tablespoons of dried minced onions
2 Tablespoons of Worcestershire sauce
1 Tablespoon of garlic power
½ teaspoon of salt
½ teaspoon of sage
¼ teaspoon of freshly ground pepper
1 Tablespoon of Mint/Apple Jelly
Preheat oven to 350◦F. Spray a 9x5 inch loaf pan with cooking oil and set
aside.
Mix the following until well blended: meat, crackers, egg, honey, onions,
garlic powder, tomatoes, barbeque sauce,
salt and pepper and
½ of the Worcestershire sauce.
Shape the meat mixture into a loaf in a prepared pan; flatten top with a
spatula.
Mix remaining tomatoes, Worcestershire sauce and the mint/apple jelly
and spoon over the meatloaf.
Bake
1 hour or until meatloaf is cooked through (160◦
and pulls away from side of pan,
removing foil for the last 15 minutes of cooking. If you wish, glaze with
another teaspoon of min/apple jelly.
Cool only
slightly before serving.
